Dar Idrissi is built around a single grove in the Atlas foothills. The Haouzia cultivar, native to Morocco’s Atlantic coast, produces an oil of pronounced intensity: green, grassy, with a long, peppery finish.
Nothing is blended. Nothing is adjusted. The oil expresses the land and the harvest year as they actually were.

Harvest
Early harvest. Olives pressed at low maturity index to maximise polyphenol content and aromatic complexity. The grove dictates timing, not the calendar.
Process
Cold extraction only. No heat. No chemical solvents. The oil never exceeds 27ºC during processing. Chemical parameters verified by independent laboratory analysis.
Flavour
Robust. Green tomato, freshly cut grass, artichoke. Bitter and peppery on finish — markers of high phenolic content and freshness.
